Ingredients
- 1/2 Onion, sliced
- 1/2 each Large Red & Yellow Bell Pepper, sliced
- 1/2 Zucchini, sliced
- 1/3 Broccoli, cut into florets
- 3-4 Asparagus stalks, trimmed and chopped
- 2 Cloves Garlic, minced
- 2 Slices Of Ginger
- 2 Spring Onions, chopped
- 3-4 Cups Fresh Shiitake/Dry Shiitake Mushrooms (Optional)
- 2 Packs Udon Noodles
- 4 tbsp Chinese Black Bean Sauce mixed with 1 tbsp Water
- 1 tbsp Dark Soy Sauce
- 2 tsp Sesame Seed Oil
- 1 tsp Sugar
- 1 tbsp Chilli Sauce
- Salt to taste
(For an extra protein boost, consider adding Soy Chunks to the mix.)
Directions
- Prepare Ingredients: Slice all vegetables as listed. Mix the dark soy sauce, sesame oil, sugar, and chili sauce in a small bowl to create the soy sauce mix.
- Cook Vegetables: Heat 1 tbsp of oil in a wok over high heat. Add half of the garlic, one slice of ginger, and half of the onions, and sauté for 1 minute. Add bell peppers, zucchini, broccoli, asparagus, and mushrooms. Stir-fry for about 3-4 minutes or until vegetables are tender yet crisp. Remove from the wok and set aside.
- Cook Noodles: Boil the udon noodles according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside to dry slightly.
- Combine and Stir-Fry: Heat the remaining oil in the wok. Add the remaining garlic, ginger and sauté for a minute. Add the noodles and vegetables back into the wok, tossing to combine.
- Season the Dish: Pour the soy sauce mix over the noodles and vegetables, stirring to ensure everything is evenly coated. Push the mixture to the sides of the wok, creating a space in the center. Pour in the diluted black bean sauce, allowing it to heat up before mixing everything together.
- Serve: Continue to stir-fry for another minute to ensure the noodles are well coated and heated through. Adjust seasoning with salt if necessary and add spring onions, and serve hot.
