Ingredients

Main Ingredients

  • 1/2 onion, sliced (approx. 60g)
  • 1/2 red bell pepper, sliced (approx. 75g)
  • 1/2 yellow bell pepper, sliced (approx. 75g)
  • 1/2 zucchini, sliced (approx. 100g)
  • 1/3 broccoli, cut into florets (approx. 100g)
  • 3–4 asparagus stalks, chopped (approx. 60g)
  • 2 cloves garlic, minced (approx. 8g)
  • 2 slices ginger (approx. 10g)
  • 2 spring onions, chopped (approx. 30g)
  • 3–4 cups shiitake mushrooms, fresh or rehydrated (approx. 120–150g)
  • 2 packs udon noodles (approx. 400g)

Sauce Ingredients

  • Chinese black bean sauce
  • Water
  • Dark soy sauce
  • Sesame oil
  • Sugar
  • Chilli sauce
  • Salt, to taste

  • Soy chunks
  • Tofu
  • Paneer

How to Make Udon in Black Bean Sauce

1. Prep the Ingredients

Slice all vegetables. In a small bowl, mix dark soy sauce, sesame oil, sugar, and chilli sauce.

2. Stir Fry the Vegetables

Heat oil in a wok over high heat. Add half the garlic, ginger, and onions. Sauté briefly.

Add bell peppers, zucchini, broccoli, asparagus, and mushrooms. Stir-fry for 3–4 minutes until just tender but still crisp. Remove and set aside.

3. Cook the Udon Noodles

Boil udon noodles as per package instructions. Drain and rinse under cold water. Set aside.

4. Combine Everything

Heat a little more oil in the wok. Add remaining garlic and ginger. Add noodles and cooked vegetables. Toss well.

5. Add the Sauce

Pour in the soy sauce mixture and toss until coated. Move noodles to the sides of the wok and add diluted black bean sauce in the centre. Let it heat for a few seconds, then mix everything together.

6. Finish & Serve

Stir-fry for another minute. Adjust seasoning if needed. Top with spring onions and serve hot.
