Savour the Flavour with Delicious Sesame Shiitake Mushrooms

Bring the rich, umami taste of shiitake mushrooms to your table with this deliciously and flavourful recipe. Perfect for a quick weeknight dinner, this dish pairs wonderfully with rice or noodles and some blanched Pak Choy and steamed green beans.

Ingredients:
- 200g fresh shiitake mushrooms or 1 cup dried shiitake mushrooms
- 2 tablespoons cornstarch
- 1 tablespoon sesame oil
- 1-2 tablespoons maple syrup
- 2 tablespoons soy sauce
- 1/2 teaspoon sesame seeds
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon ground ginger
- Chopped spring onions and sesame seeds, for garnish
- 1/2 teaspoon cornstarch + 1/2 teaspoon water (slurry)

Preparation:
- Prep Mushrooms: Soak & rehydrate the shiitake mushrooms if dried, then slice them. If fresh wash and slice them. Coat the mushroom slices in cornstarch until fully covered.
- Fry Mushrooms: Heat sesame oil in a pan over medium heat. Fry the coated mushrooms until crispy, about 3-5 minutes. Remove from the pan and set aside.
- Make Sauce: In the same pan, add soy sauce, maple syrup, sesame seeds, ground black pepper, and ground ginger. Let the sauce thicken for 2-3 minutes. Adjust sweetness by adding more maple syrup if desired.
- Combine: Add the fried mushrooms back into the pan. Toss to coat them in the sauce until they become thick and sticky, about 2-3 more minutes.
- Serve: Remove from heat and serve the sticky sesame shiitake mushrooms with rice or noodles. Garnish with chopped spring onions and extra sesame seeds. Pair with blanched Pak Choy and steamed green beans for a complete meal.
