This Berry Salad brings together juicy strawberries, plump blueberries, crisp greens, fragrant basil, and creamy feta, all tossed in a sweet-tangy strawberry honey vinaigrette. Light, vibrant, and perfectly balanced, it’s a dish meant to be shared, ideal as a romantic starter or a refreshing meal made with love.
For salad Ingredients:
200g strawberry washed and quartered
80g blueberry
1 packet lettuce salad mix
1 packet wild rocket
20g fresh basil italian leaves, torn
40g feta cheese, crumbled
For the Caramelised Walnuts:
40g walnuts (a generous handful)
3 tablespoons sugar
For the Strawberry Honey Vinaigrette:
2–3 tablespoons balsamic vinegar
2 tablespoons grain mustard
2–3 tablespoons honey
3–4 strawberries
1 teaspoon black pepper
Salt, to taste
Preparation:
Prepare the Greens:
Wash and thoroughly dry the lettuce salad mix and wild rocket. Transfer to a large serving bowl or platter.
Caramelise the Walnuts:
In a small saucepan over medium heat, add sugar and allow it to caramelise. Add walnuts and toast for a few minutes until golden and coated. Transfer onto parchment paper, let cool, then roughly chop.
Make the Vinaigrette:
Blend balsamic vinegar, grain mustard, honey, strawberries, black pepper, and salt until smooth. Taste and adjust sweetness or acidity if needed.
Assemble & Serve:
Spread the greens on a plate. Top with strawberries, blueberries, torn basil leaves, caramelised walnuts, and feta crumbles. Drizzle generously with vinaigrette and finish with freshly ground black pepper.
